Barrel-Aged Stout

Uncle Jacob’s Stout      ‘15

Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey “Bourbon.” He built his distillery in Bourbon County Kentucky in 1790 — 203 years before we began brewing.  In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest Bourbon barrels.

The Abyss       ‘14

The Abyss is an imperial stout is brewed with brewers’ licorice, cherry bark, vanilla, and black strap molasses and is then “dry hopped” with vanilla beans and cherry bark. It is finished in bourbon, Oregon oak and pinot noir barrels. 86 IBU

Berserker       ‘15

This vintage of Berserker Imperial Stout was aged in oak bourbon barrels. Vicious and viscous, this menacing brew pours opaque black with a creamy maduro-colored head. Bourbon Santa’s Little Helper       ‘15

Ground Control       ‘15

This rich, complex Imperial Stout is brewed with Oregon hazelnuts, star anise & cocoa nibs, and fermented with an Ale yeast that survived a trip to space & back. [BANISHED] Tough Love       ‘15

Homage of sorts to the traditional Russian Imperial Stouts & the ruling style of Catherine the Great. We construct it with dark roasted malts, malted rye, and oak-smoked wheat, and then banish it to Kentucky bourbon barrels. This year’s release was banished a full year, smoothing out the edges on an otherwise bold statement, and yielding notes of vanilla, hints of dried cherry, & flavors of velvety dark chocolate. 70 IBU

Kentucky Dark Star       ‘14

Kentucky Dark Star is an Imperial Oatmeal Stout aged in 15-year old Kentucky Bourbon Barrels. This year’s release is a blend of 18, 12, and 8-month aged bourbon-aged Dark Star. 50% aged for 10 months in barrels that once held Oregon Pinot Noir, Tempranillo & Malbec. Brewed w/English malts & Cascade & Millennium hops. The Reserve Series romance all began with the first release of this limited-edition brew. Mirror Mirror, born of a double batch of Mirror Pond Pale Ale, is an inspired barley wine ale layered with intriguing nuances. Explore this latest incarnation & enjoy its delicious complexity in every sip.  53 IBU

Barrel-Aged Sour Ale

Barrelworks Agrestic Sour Ale       ’15

The 2015 Batch #2 begins its journey as DBA, then transforms into Agrestic by a “chrysalis” process involving 85% French and 15% American oak barrels and our proprietary collection of microflora. To blend, we selected beer matured eight to 36 months in barrels, creating a synergistic beer. Like Batch #1, Agrestic Batch #2 signature flavors and aromas shine.  Toasted oak, lemon pith, and rosewood swirl on the nose and palate,  followed by an amazing harmony of vanilla, coconut, Earl Grey tea, dark cherries and spice. The finish is crisp, with a mouthwatering acidity and chewy tannins.        A santé!

The Dissident       ‘14

The Dissident is a Flanders-style sour brown ale, aged in pinot and cabernet wine barrels with Brettanomyces yeast and cherries for 18 months. The breakdown for this year is 35% aged in wine barrels, 65% ale with cherries. 86 IBU

Barrel-Aged Strong Ale

Double DBA       ‘12

Double DBA is essentially DBA brewed at double strength & matured for an extended period. The same DBA malts & hops were used, but at twice the amount. Like DBA, Double DBA was partially fermented in a “union” of new American oak barrels typically used for winemaking. 29 IBU

Double DBA is their flagship beer brewed at double strength. It is amazingly similar in many respects to the barrel fermented DBA and possesses everything they love about that beer times two. English caramel malts lend rich toffee character that pairs well with assertive medium toast American oak barrels.

Double DBA       ‘14

As with the regular DBA, the 2014 Double DBA was partially fermented in a union of new American oak barrels. After           fermentation, the beer was racked and returned to the union barrels as well as bourbon barrels, where it aged for one year. This is the final release of this beer from Firestone. 29 IBU

Fat Woody       ‘15

What happens when you take a rich, complex scotch ale and age it on American white oak? Fat Woody is created. Smooth vanilla notes intertwine with subtle smokiness and bold malt character in this big brother to our Fat Scotch Ale. 25 IBU   

Firestone 15th Anniversary Ale       ‘11

As a finished beer, XV is alive with amazing complexity and yet it is quite possibly the most integrated and seamless blend yet. Looking at a blend of 8 beers on paper at first looks chaotic and potentially disjointed; however, a closer look reveals and interesting theme: 76% Barley Wine style beers, 19% Stout and 5% Imperial IPA. XV introduces our new blonde barley wine Helldorado with flavors of lavender honey liqueur. The well established DDBA delivers its signature American toasted oak, English caramel toffee and light leather nuances. 2010 vintage Sticky Monkey folds in brown sugar, maple, cinnamon, ginger and ripe figs. Parabola brings the familiar flavors of roasted dark coco, and chocolate covered cherries. Velvet Merkin carries silky milk chocolate, toasted coconut and creamy textures. Good Foot and Bravo add assertive barley wine warmth and lush barrel derived vanilla bean notes. The game changer this year is the addition of Double Jack to the blend. At just 5% its massive dry hop character brings citrus zest, tangerine and mango aromas making this a completely new beer. The beer is unfiltered and unfinished, so there will be a small amount of sediment in the bottom of the bottle. XV is best enjoyed poured carefully into a half-filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. As the beer sits and breathes in the glass, a richer, orange zested, chocolate dusted, vanilla custard character is revealed, so take your time.

Firestone 17th Anniversary Ale       ‘13

As a finished beer, XVII is dark, rich and complex. The lead beers of the blend are Bravo, a lean and oak-forward imperial brown ale and Stickee Monkee, a huge brown sugar infused barley wine. These beers are beautiful on their own but together they bring rich molasses drenched oak flavors and cinnamon glazed almond aromas lifted by high alcohol. In the middle of the blend are our two favorite stouts, Parabola and Velvet Merkin, working in concert to provide a dusty cocoa mocha aroma and bitter dark chocolate flavors. Somehow together in this blend I am reminded of Bourbon-soaked chocolate chip cookie dough! Double DBA makes the blend again this year, bringing its signature vanilla-infused crème brulée flavor. Helldorado, our blonde barley wine, helps to bring balance with its honey notes and light leather nuances. Like last year, a dash of Wookey Jack made the cut bringing with it some fresh hop notes derived from bold Citra and Amarillo creating even more interesting complexity. All together I find XVII to be full of soft chocolate and warm spice perfectly balanced by toasted coconut, bourbon barrel notes and smooth creamy malt mellowness. The finished blend is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVII is best enjoyed poured carefully into a half-filled brandy snifter or red wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. It takes a while, but as this beer sits and breathes in the glass, more rich chocolate and spice character is revealed as the ethereal spirit characters dissipate - so take your time.

Black Butte XXIII        ’11

XXIII.23rd Anniversary Black Butte Imperial Porter is brewed with cocoa nibs, orange and natural flavors added, with 25% aged in Bourbon Barrels.

Black Butte XXIV       ‘12

XXIV. 24 years after Black Butte Porter’s debut, their potent,  layered, imperial tribute returns. As usual, it’s a jazz riff, guided by the brewer’s muse and the lure of exotic ingredients. Artisanal dark chocolate nibs. Daglet dates. Mission figs. It may, possibly, hopefully, be the best edition yet.

Black Butte XXV       ‘13

XXV. Dates, figs and chocolate. Black currants, barrel-aged in bourbon casks. The result is an Imperial Porter with a tart berry and chocolate aroma with luscious layers of dried fruit, oak and vanilla. A fitting tribute to the 25th Anniversary of their flagship Black Butte porter.

Black Butte XXVI        ‘14

XXVI. 26th anniversary Imperial Porter was aged in bourbon   barrels and dry spiced with Theo Chocolate’s cocoa nibs, revealing hints of vanilla and chocolate. Pomegranate molasses and Oregon cranberries complement the robust flavor with a hint of fruit and just enough tart to make you smile. 60 IBU
