Barrel-Aged Stout

Uncle Jacob’s Stout      ‘15

Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey “Bourbon.” He built his distillery in Bourbon County Kentucky in 1790 — 203 years before we began brewing.  In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest Bourbon barrels.

The Abyss       ‘14

Deschutes     Bend, OR      11.0%      22oz      20

The Abyss is an imperial stout is brewed with brewers’ licorice, cherry bark, vanilla, and black strap molasses and is then “dry hopped” with vanilla beans and cherry bark. It is finished in bourbon, Oregon oak and pinot noir barrels. 86 IBU

Brewed with Blackstrap Molasses, Brewer’s Licorice, Vanilla Beans, & Cherry Bark. 50% barrel aged in bourbon, Oregon oak, and Pinot Noir casks.

Velvet Merkin       ‘14

Velvet Merlin Stout aged in Bourbon Barrels. It goes into the barrels as a roasty dark chocolate, coffee accented mild mannered stout & comes out transformed as a milk chocolate, smooth dark cherry, vanilla & coconut infused masterpiece.

Silva Stout        ‘15

Their Double Stout ages in oak bourbon barrels, and artfully emerges as Silva Stout. This midnight black ale features elegant notes of oak, vanilla, dark chocolate, coffee, roasted barley and ripe cherry. Round and delicately balanced in body, each sip    envelops the palate with its impressively complex craft                    composition. 

Parabola       ‘14

Berserker       ‘15

This vintage of Berserker Imperial Stout was aged in oak bourbon barrels. Vicious and viscous, this menacing brew pours opaque black with a creamy maduro-colored head. Its aroma offers seductive whiskey, chewy red wine, dark fruit and lavish tobacco. Berserker Imperial Stout invades your taste buds with in-your-face flavor. 30 IBU

Ground Control       ‘15

Ninkasi      Eugene, OR         10.0%      22oz     22

Ground Control boldly combines local and out-of-this-world ingredients. This rich, complex Imperial Stout is brewed with Oregon hazelnuts, star anise & cocoa nibs, and fermented with an Ale yeast that survived a trip to space & back. Mankind will enjoy the sweet finesse of this beer that only fares better with time. 80 IBU

[BANISHED] Tough Love       ‘16

Our fourth vintage of an annual favorite, this year’s Tough Love remains true to form— bold, yet wonderfully nuanced— with its own unique personality. After being banished to Kentucky Bourbon barrels under controlled conditions for nearly a year, rich overtones of dark roasted malt, oak-smoked wheat and malted rye give way to delicate notes of velvety chocolate, vanilla and dried cherries. Kentucky Dark Star       ‘14

Kentucky Dark Star is an Imperial Oatmeal Stout aged in 15-year old Kentucky Bourbon Barrels. This year’s release is a blend of 18, 12, and 8-month aged bourbon-aged Dark Star. The roasted and chocolate malts compliment the smooth oats to bring you a stout delight wrapped in a gentle embrace of Bourbon Barrel-aged warmth. A touch of sweetness dances in balance with the hops to finish with a wave and then she’s gone.

Charred Xocoveza Stout       ‘15

Stone Brewing     Escondido, CA     10.1%       16.9oz     30

Time spent in bourbon barrels gave an already complex beer even more complexity and flavor intensity, layering additional    caramel-like and vanilla flavors on top of those already present. Aromas of rich coffee and dark chocolate are followed by nutmeg and cinnamon;  a lush, heavy mouthfeel laden with charred oak and toffee engulfs the palate on the first sip. Lingering pasilla pepper and soft oak flavors persist through an exceptionally long finish in this intensely rich and satisfying beer.

 

Barrel-Aged Barleywine

Confoundingly unpronounceable yet eminently drinkable—welcome to §ucaba, an epic barrel-­aged English barleywine. Big, boozy bourbon and American oak aromas combine with soft chocolate malty undertones. Complex malt flavors are framed in oak with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. 42 IBU

Mirror Mirror       ‘14

50% aged for 10 months in barrels that once held Oregon Pinot Noir, Tempranillo & Malbec. Brewed w/English malts & Cascade & Millennium hops. The Reserve Series romance all began with the first release of this limited-edition brew. Mirror Mirror, born of a double batch of Mirror Pond Pale Ale, is an inspired barley wine ale layered with intriguing nuances. Explore this latest incarnation & enjoy its delicious complexity in every sip.  53 IBU

Barrel-Aged Sour Ale

Barrelworks Agrestic Sour Ale       ’15

The 2015 Batch #2 begins its journey as DBA, then transforms into Agrestic by a “chrysalis” process involving 85% French and 15% American oak barrels and our proprietary collection of microflora. To blend, we selected beer matured eight to 36 months in barrels, creating a synergistic beer. Like Batch #1, Agrestic Batch #2 signature flavors and aromas shine.  Toasted oak, lemon pith, and rosewood swirl on the nose and palate,  followed by an amazing harmony of vanilla, coconut, Earl Grey tea, dark cherries and spice. The finish is crisp, with a mouthwatering acidity and chewy tannins.        A santé!

The Dissident       ‘14

The Dissident is a Flanders-style sour brown ale, aged in pinot and cabernet wine barrels with Brettanomyces yeast and cherries for 18 months. The breakdown for this year is 35% aged in wine barrels, 65% ale with cherries. 86 IBU

Barrel-Aged Strong Ale

Double DBA       ‘12

Firestone Walker     Paso Robles, CA    12.0%   22oz         24

Double DBA is essentially DBA brewed at double strength & matured for an extended period. The same DBA malts & hops were used, but at twice the amount. Like DBA, Double DBA was partially fermented in a “union” of new American oak barrels typically used for winemaking. 29 IBU

Double DBA       ‘13

Double DBA is their flagship beer brewed at double strength. It is amazingly similar in many respects to the barrel fermented DBA and possesses everything they love about that beer times two. English caramel malts lend rich toffee character that pairs well with assertive medium toast American oak barrels.

Double DBA       ‘14

As with the regular DBA, the 2014 Double DBA was partially fermented in a union of new American oak barrels. After           fermentation, the beer was racked and returned to the union barrels as well as bourbon barrels, where it aged for one year. This is the final release of this beer from Firestone. 29 IBU

Bourbon Barrel Abominable        ‘12

Bourbon Barrel Abominable Winter Ale, aka Bbomb, is aged in 15-year-old American Oak whiskey barrels. 2012’s limited release is a blend of 15 & 7-month-old bourbon-aged Abominable Ale. Bbomb achieves distinct bourbon, oak, and    vanilla flavors, balanced by chocolate roast malt.

Bourbon Barrel Abominable Winter Ale, aka Bbomb, is aged in 15-year-old American Oak whiskey barrels. 2013’s limited release is a blend of 24 and 12-month-old bourbon-aged Abominable Ale. Bbomb achieves distinct bourbon, oak, and vanilla flavors, balanced by chocolate roast malt.

Fat Woody       ‘15

Silver City        Silverdale, WA      9.2%       22oz      24

What happens when you take a rich, complex scotch ale and age it on American white oak? Fat Woody is created. Smooth vanilla notes intertwine with subtle smokiness and bold malt character in this big brother to our Fat Scotch Ale. 25 IBU   

 

Firestone 17th Anniversary Ale       ‘13

Firestone Walker     Paso Robles, CA      13.3%     22oz      44

As a finished beer, XVII is dark, rich and complex. The lead beers of the blend are Bravo, a lean and oak-forward imperial brown ale and Stickee Monkee, a huge brown sugar infused barley wine. These beers are beautiful on their own but together they bring rich molasses drenched oak flavors and cinnamon glazed almond aromas lifted by high alcohol. In the middle of the blend are our two favorite stouts, Parabola and Velvet Merkin, working in concert to provide a dusty cocoa mocha aroma and bitter dark chocolate flavors. Somehow together in this blend I am reminded of Bourbon-soaked chocolate chip cookie dough! Double DBA makes the blend again this year, bringing its signature vanilla-infused crème brulée flavor. Helldorado, our blonde barley wine, helps to bring balance with its honey notes and light leather nuances. Like last year, a dash of Wookey Jack made the cut bringing with it some fresh hop notes derived from bold Citra and Amarillo creating even more interesting complexity. All together I find XVII to be full of soft chocolate and warm spice perfectly balanced by toasted coconut, bourbon barrel notes and smooth creamy malt mellowness. The finished blend is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVII is best enjoyed poured carefully into a half-filled brandy snifter or red wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. It takes a while, but as this beer sits and breathes in the glass, more rich chocolate and spice character is revealed as the ethereal spirit characters dissipate - so take your time.

Firestone 18th Anniversary Ale          ‘14

As a finished beer, XVIII is a dark and complex brew full of malt and barrel derived flavors, with Parabola leading the brew into the rich darkness. The beer is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVIII is best enjoyed poured carefully into a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. As the beer sits and breathes in the glass, rich dark chocolate, toasted oak and dark fruit character is revealed, so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well and change favorably for years to come. It was an absolute pleasure in the making and I truly hope you enjoy our ninth oak-aged blend! The journey continues and it’s just as fun and exciting now as it was back in 1996. This beer is dedicated to Jake and the rest of the amazing Wolfe family who have     supported this community, our brewery and me personally since the beginning. We love you dearly. -Matt

Black Butte XXIV       ‘12

XXIV. 24 years after Black Butte Porter’s debut, their potent,  layered, imperial tribute returns. As usual, it’s a jazz riff, guided by the brewer’s muse and the lure of exotic ingredients. Artisanal dark chocolate nibs. Daglet dates. Mission figs. It may, possibly, hopefully, be the best edition yet.

Black Butte XXV       ‘13

XXV. Dates, figs and chocolate. Black currants, barrel-aged in bourbon casks. The result is an Imperial Porter with a tart berry and chocolate aroma with luscious layers of dried fruit, oak and vanilla. A fitting tribute to the 25th Anniversary of their flagship Black Butte porter.

Black Butte XXVI        ‘14

XXVI. 26th anniversary Imperial Porter was aged in bourbon   barrels and dry spiced with Theo Chocolate’s cocoa nibs, revealing hints of vanilla and chocolate. Pomegranate molasses and Oregon cranberries complement the robust flavor with a hint of fruit and just enough tart to make you smile. 60 IBU
