Barrel-Aged Stout

Uncle Jacob’s Stout      ‘15

Jacob Spears, our 6th Great Grand Uncle, is credited as the    first distiller to label his whiskey “Bourbon.” He built his distillery in Bourbon County Kentucky in 1790, 203 years before we began brewing.  In his honor, we present this           robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest Bourbon barrels.

Abraxus Imperial Stout      ‘15

Perennial Artisan Ales    St. Louis, MO 10.0% 25.4oz     26

An Imperial Stout brewed with ancho chili peppers, cacao nibs, vanilla beans, and cinnamon sticks. Pouring deep brown with a thick head, this beer has a complex body with a delicious lingering roastiness. Abraxas is brewed with unique ingredients intended to challenge and excite the palate. It may be enjoyed right away or allowed to age in the bottle. Vertical tastings are encouraged. Perennial Artisan Ales is a small batch craft brewery dedicated to producing unique, premium beers. Our beers are brewed with the experimental, seasoned craft beer drinker in mind.

The Parabola       ‘14

Like no other vintage before it, the 2014 Parabola is a beer of darkness and immensity, a beast that bares its teeth with a   highest-ever 14% ABV—and yet its bite remains refined. The flavor profile of this beer is pretty intense, but it also offers this creamy dark chocolate and polished milled cocoa character that keeps the bitterness in check among the complexity. 82 IBU

The Parabola       ‘15

 Silva Stout        ‘15

Their Double Stout ages in oak bourbon barrels, and artfully emerges as Silva Stout. This midnight black ale features         elegant notes of oak, vanilla, dark chocolate, coffee, roasted barley and ripe cherry. Round and delicately balanced in body, each sip envelops the palate with its impressively complex craft composition. 

[BANISHED] Tough Love       ‘16

Our fourth vintage of an annual favorite, this year’s Tough Love remains true to form— bold, yet wonderfully nuanced        — with its own unique personality. After being banished to Kentucky Bourbon barrels under controlled conditions for nearly a year, rich overtones of dark roasted malt, oak-smoked wheat and malted rye give way to delicate                 notes of velvety chocolate, vanilla and dried cherries.

Kentucky Dark Star is an Imperial Oatmeal Stout aged in 15-year old Kentucky Bourbon Barrels. This year’s release              is a blend of 18, 12, and 8-month aged bourbon-aged Dark Star. Charred Xocoveza Stout       ‘15

Stone Brewing     Escondido, CA     10.1%       25.4oz     30

Time spent in bourbon barrels gave an already complex beer even more complexity and flavor intensity, layering additional    caramel-like and vanilla flavors on top of those already present. Aromas of rich coffee and dark chocolate are followed by nutmeg and cinnamon;  a lush, heavy mouthfeel laden with charred oak and toffee engulfs the palate on the first sip. Lingering pasilla pepper and soft oak flavors persist through an exceptionally long finish in this intensely rich and satisfying beer.

Mirror Mirror       ‘14

50% aged for 10 months in barrels that once held Oregon Pinot Noir, Tempranillo & Malbec. Brewed w/English malts & Cascade & Millennium hops. The Reserve Series romance all began with the first release of this limited-edition brew. Mirror    Mirror, born of a double batch of Mirror Pond Pale Ale, is an inspired barley wine ale layered with intriguing nuances. Explore this latest incarnation & enjoy its delicious complexity in every sip.  53 IBU

 

Barrel-Aged Sour Ale

Barrelworks Agrestic Sour Ale       ’15

Firestone Barrelworks  Paso Robles, CA           6.6%  16.9oz     20

The 2015 Batch #2 begins its journey as DBA, then transforms into Agrestic by a “chrysalis” process involving 85% French and 15% American oak barrels and our proprietary collection of microflora. To blend, we selected beer matured eight to 36 months in barrels, creating a synergistic beer. Like Batch #1, Agrestic Batch #2 signature flavors and aromas shine.  Toasted oak, lemon pith, and rosewood swirl on the nose and palate,  followed by an amazing harmony of vanilla, coconut, Earl Grey tea, dark cherries and spice. The finish is crisp, with a mouthwatering acidity and chewy tannins.  A santé!

The Dissident       ‘14

Deschutes Bend, OR 10.7% 22oz 26

The Dissident is a Flanders-style sour brown ale, aged in pinot and cabernet wine barrels with Brettanomyces yeast and cherries for 18 months. The breakdown for this year is 35% aged in wine barrels, 65% ale with cherries. 86 IBU

Introducing their wildest brew yet, The Dissident - a distinctive Belgian-style brown ale brewed with cherries and 40% aged in French oak wine barrels. Fermented with wild yeast, we have to isolate this brew so as not to influence the others. Otherwise, we just might have anarchy on our hands. Here’s to solitary confinement. And shared exploration.

SpontanBasil Lambic       ‘16

Lindemans / Mikkeller Belgium     6.0%   25.4oz       48

Lindemans SpontanBasil is a unique collaboration between Lindemans and Mikkeller. Breaking the mold among existing beer styles, the brewers'combined efforts resulted in this old gueuze with a twist: based on a blend of 12 months with 2 to 3 year old lambic fermented on oak, with the addition of fresh basil. Bottle Conditioned, SpontanBasil has a golden color and combines the sourness of lambic with the aromas and flavors of fresh basil. It’s the ideal aperitif, and is also              perfect for food pairing.

The Lamb      ‘16

The Lamb is the first release of the Fremont Fermentation Lab, a project that Fremont Brewing created to brew unique       small-batched artisan beers, aged in oak and touched by wildness. This Saison is brewed with Northwest hops and aged in oak barrels with Brettanomyces Lambicus to produce pear and  apple notes and a distinct but gentle, funky farmhouse character. The Lamb is bottle conditioned and finishes dry and crisp. Because Beer Matters!

 

Barrel-Aged Strong Ale

Double DBA       ‘12

Firestone Walker     Paso Robles, CA             12.0%   22oz              24

Double DBA is essentially DBA brewed at double strength &   matured for an extended period. The same DBA malts & hops were used, but at twice the amount. Like DBA, Double DBA   was partially fermented in a “union” of new American oak barrels typically used for winemaking. 29 IBU

Double DBA       ‘13

Firestone Walker     Paso Robles, CA 12.0% 22oz 22

Double DBA is their flagship beer brewed at double strength. It is amazingly similar in many respects to the barrel fermented DBA and possesses everything they love about that beer times two. English caramel malts blend rich toffee character that pairs well with assertive medium toast American oak barrels.

Double DBA       ‘14

Firestone Walker     Paso Robles, CA 12.0% 22oz 20

As with the regular DBA, the 2014 Double DBA was partially fermented in a union of new American oak barrels. After fermentation, the beer was racked and returned to the union   barrels as well as bourbon barrels, where it aged for one year. This is the final release of this beer from Firestone. 29 IBU

B-Bomb       ‘14

This year’s release of B-bomb is aged in 12 & 15-year-old American Oak Whiskey barrels and is a blend of 24 and 12-month old barrel strength Abominable Ale. B-bomb achieves distinct bourbon, oak, cacoa, leather and dark coffee notes from it’s extended barrel aging and barrel blending. Each barrel contributes a different note and combining each barrel to create a coherent tone is a distinct art and true pleasure. Please do    enjoy this unique barrel-aged ale today but know that B-bomb will age gracefully for at least another 5 years. Don’t be afraid to be Abominable.

 Firestone 17th Anniversary Ale       ‘13

Firestone Walker     Paso Robles, CA             13.3%   22oz              40

 As a finished beer, XVII is dark, rich and complex. The lead beers of the blend are Bravo, a lean and oak-forward imperial brown ale and Stickee Monkee, a huge brown sugar infused barley wine. These beers are beautiful on their own but together they bring rich molasses drenched oak flavors and cinnamon glazed almond aromas lifted by high alcohol. In the middle of the blend are our two favorite stouts, Parabola and Velvet Merkin, working in concert to provide a dusty cocoa mocha aroma and bitter dark chocolate flavors. Somehow together in this blend I am reminded of Bourbon-soaked chocolate chip cookie dough! Double DBA makes the blend again this year, bringing its signature vanilla-infused crème brulée flavor. Helldorado, our blonde barley wine, helps to bring balance with its honey notes and light leather nuances. Like last year, a dash of Wookey Jack made the cut bringing with it some fresh hop notes derived from bold Citra and Amarillo creating even more interesting complexity. All together I find XVII to be full of soft chocolate and warm spice perfectly balanced by toasted coconut, bourbon barrel notes and smooth creamy malt mellowness. The finished blend is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVII is best enjoyed poured carefully into a half-filled brandy snifter or red wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. It takes a while, but as this beer sits and breathes in the glass, more rich chocolate and spice character is revealed as the ethereal spirit characters dissipate - so take your time.

Firestone 18th Anniversary Ale          ‘14

 Firestone Walker     Paso Robles, CA             13.0%    22oz              36

 As a finished beer, XVIII is a dark and complex brew full of malt and barrel derived flavors, with Parabola leading the brew into the rich darkness. The beer is unfiltered and unfined, so there will be a small amount of sediment in the bottom of the bottle. XVIII is best enjoyed poured carefully into a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. As the beer sits and breathes in the glass, rich dark chocolate, toasted oak and dark fruit character is revealed, so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well and change favorably for years to come. It was an absolute pleasure in the making and I truly hope you enjoy our ninth oak-aged blend! The journey continues and it’s just as fun and exciting now as it was back in 1996. This beer is dedicated to Jake and the rest of the amazing Wolfe family who have     supported this community, our brewery and me personally since the beginning. We love you dearly. -Matt
